White Tea: White tea is made from the newest growth of young leaves and downy buds of the tea plant, hand-picked during the fresh spring harvest in China’s Fujian province. Hence the name Pai Mu Tan, ‘white peony’. The leaves will first be wilted, then gently rolled and air-dried. This minimal process and low oxidation allows them to keep most of their healthy substances. As a result white tea contains a high level of antioxidants. White tea is the purest and least processed of all tea with a soft, delicate flavor profile. White tea is available in different variants. Each species has its own characteristics, so you can easily find something to everybody’s taste.
